Esto se consigue generando una descarga electrica mientras el pez esta
anzuelado todavia

La maquina de electro-aturdimiento consta de 3 partes principales:

-Soldadora gran potencia
-Un electrodo
-Una toma de tierra

Antes de izar el pez a bordo, se desliza a traves de la brazolada el electrodo con
la toma de tierra, cerrandose el circuito electrico con un interruptor cuando el
responsable lo desee.

Una simple descarga es suficiente para aturdir al animal.

El izado y manipulacion del atun y otras grandes especies marinas es sumamente complicado y peligroso, conllevando un serio riesgo para la tripulacion de cubierta.

Mediante este sistema se consigue que el pez sea izado a cubierta facilmente,
siendo mucho mas sencillo y seguro su posterior manipulacion y sacrificio.

Una gran ventaja de este tipo de izado es economica.

En el caso del atun rojo, al evitar el movimiento y el estres previo a la muerte y al
izado a bordo, se consigue que la carne tenga un contenido mucho menor en
acido lactico.

-Mayor valor economico

Su valor en el mercado japones como carne especial "sashimi grade" es mucho
mayor.

Este sistema de electro-aturdimiento para estos grandes peces esta en linea con
las directivas comunitarias de la EU sobre el sacrificio de las especies domesticas terrestres mediante aturdimiento electrico previo.

Electrostunning is achieved by generating an electric shock while the hook is still
in the fish.

The electrostunning machines is made up of 3 main parts:

-A powerful welding machine
-An electrode
-An earth plate

Before raising the fish on board, the electrode is guided through the branch line
complete with the earth plate.

This completes the electric circuit which is operated by the individual at his
convenience. One simple discharge is enough to stun the animal.

The first advantage is operational. The raising and manipulation on board of these large species is both complicated and dangerous for the crew.

This system simplifies the operation and the fish can be raised on board easily
prior to the final killing of the animal.

The second advantage is economic.

In the case of the Big Eye Tuna the fish is made to stand still and thus this method avoids the stress associated with the traditional means of raising fish on board the vessel.

The meat then has a minimum accumulation of lactic acid and is consequently
more valuable in the Japanese market. It can then be classified as "sashimi
grade".

-Less residual lactic acid
-Adds value to the animal

The electrostunning process used for the large pelagic species is in total
accordance with the E.U. directives associated with the slaughter of domestic
animals.
