Galician fleet presents new marine protein to value fishing discards

The Galician fleet integrated in the Organization of Producers of Fresh Fisheries of Marin (OPROMAR) progresses in the search of formulas to give value to and to obtain economic yield from species that have been discarded so far due to their low profitability.
Those responsible for OPROMAR carried out several studies in the last months within the Project Valdescar -- together with another one called Descartes.cero -- to obtain quality products from the species having little commercial value. As a result of these efforts, a marine protein, called mince, will be presented. It is formed with the chopped fish muscle "that can serve as a base or raw material for many industry elaborations such as fish sticks, wands or delicacies".
OPROMAR researchers carried out different studies of the obtained product and several tests, in collaboration with the High Council of Scientific Investigations (CSIC), with good results, besides tastings in different sales channels.
Those responsible for the project ensure that the mince "can meet the demand of the processing industry or any operator in the food chain."
The official presentation of the protein mince will be on Tuesday, April 25 at the stand of the Undersecretariat of Marine Affairs at the Gourmet Hall in Madrid.
