Kindai fish farm restaurant to open in Ekinaka, Tokyo station in August

Kinki University (Higashi-Osaka City, Osaka Prefecture), known for researching aquaculture techniques such as tuna and red sea bream, said yesterday that it opened a restaurant called “Kinki University Fisheries Research Institute Harare” that offers aquaculture fish using the same aquaculture technology. Announced to open a store at Gransta Tokyo, an Ekinaka commercial facility at Tokyo Station. Gransta Tokyo was scheduled to open on June 17, but due to the spread of the new coronavirus infection, the operation was postponed except for some stores. It is scheduled to open on August 3rd, and Kindai will open its third fish-culture restaurant after Kita-ku, Osaka and Ginza, Tokyo.

"Kindai University Fisheries Research Institute Harare" is operated by Kindai and a venture company, Armin Kindai (Shirahama Town, Wakayama Prefecture), which originates from the university. Kindai University Fisheries Research Institute grows juvenile fish and cooks fish cultivated by companies all over the country and provides them.

Since this store is located inside the station unlike the existing two stores, it offers a quick menu such as sushi in a pail and a breakfast menu. They also developed freeze-dried miso soup containing the extract of "Kindai Tuna" grown using the aquaculture technology of the Kindai.

The fish used are "Takashima main tuna" in Matsuura City, Nagasaki Prefecture, which was cultivated using juvenile fish from Kindai, "Fukaura Shintai" and "Kindai Shimaji" grown in Fukaura Bay, Ehime Prefecture.

The menu is similar to tuna large toro, middle toro, and red meat-filled “tuna-made sushi” (2950 yen, prices include tax), tuna “red” and red sea bream and white tuna “white”. "Kindai Red and White Tebushi Sushi" (2200 yen) and "Kindai Rose Chirashi Sushi" (1650 yen) with plenty of tuna, red sea bream and striped horse mackerel. As a breakfast menu, "Kindai Tsuzushi Morning Set" (1650 yen), where you can enjoy tuna sashimi and grilled fish that change daily, is offered.

In 1948, shortly after the war, Kindai established the Seaside Research Institute (now Fisheries Research Institute) in Shirahama City, Wakayama Prefecture, and started research on fish farming technology. After that, he succeeded in the cultivation of yellowtail and established aquaculture technology for red sea bream and amberjack. Regarding bluefin tuna aquaculture, it succeeded in complete aquaculture in June 2002 over 32 years. It was also widely reported in the media.

The aquaculture specialty restaurant is operated to return such research results to society, and it is also a place to disseminate the results of the students, such as providing menus that the students engaged in development.
