'Organic Hamachi' is the first organic fish in Japan that meets international standards and was certified in March 2023

Kura Sushi Features Premium, Organically Farmed Yellowtail

Kura Sushi is offering a limited-time promotion on their premium yellowtail (hamachi), while supplies last, starting Friday, February 7th.

This organically farmed hamachi is the first in Japan to achieve internationally recognized certification. Compared to wild-caught yellowtail, it boasts three times the ornithine content (a compound abundant in clams, believed to combat fatigue and improve overall well-being) and is rich in omega-3 unsaturated fatty acids (DHA, etc.). (*Researched by the General Water Research Institute Co., Ltd. in October 2021. Figures for comparison with wild yellowtail. Kura Sushi's "Organic Hamachi" achieved its internationally recognized certification in March 2023, a culmination of research and development efforts begun in 2018. From feed production to harvesting and processing, every step adheres to stringent international standards, including traceability. Committed to local partnerships, KURA Fish Farm has also joined the local fishing cooperative and secured fishing rights.

Established as a Kura Sushi subsidiary in November 2021, KURA Fish Farm is the first conveyor belt sushi chain with its own dedicated fisheries division. Beyond producing and wholesaling "Organic Hamachi," the company is pioneering "smart aquaculture" using AI and ICT to address labor shortages and improve working conditions.
