Puerto San Julián: First export to the USA of red king crab (Lithodes santolla) for direct consumption

The National Agri-Food Health and Quality Service (Senasa) certified the first export of 10 tons of king crab to the United States, in its presentation of the finished product direct to the gondola from the town of Puerto San Julián, province of Santa Cruz.
In this Patagonian city is the processing establishment No. 5183, the only one in the country dedicated exclusively to this product, with 170 tons produced in the year 2022.
The export of crab is carried out annually in large volume packages to finish its process in the country of destination, so this export constitutes a novelty as it is a finished product for direct commercialization in the retail market, which generates greater added value and employs more labor on land, creating sources of work of great importance for the town of Puerto San Julián.
Senasa's Southern Patagonia Regional Center carries out safety controls and certification of fishing products in Puerto San Julián through the staff of its Office in that city: Eva Inostroza and Gustavo Aros, under the supervision of Juan Martínez Paiva.
The remaining production of crab meat for export is obtained on the high seas in processing freezer ships, which operate on the natural banks where this animal is found.

The red king crab (Lithodes santolla) is a crustacean that inhabits the Argentine sea and belongs to the family of crabs, constituting a premium product of high commercial value - around 18,000 dollars a ton -, and with a fairly complex production process.

It is a harvest species - it has specific fishing seasons to be able to respect its biological and reproductive cycle -, which is captured by means of traps or pots, its fishing quota being selective, to avoid mortality due to incidental captures of other species .
