Sustainable Farmed Caviar

Through the combination of time, effort, tradition, know-how and research, Riofrío has been able to produce one of the highest quality caviar in the world.

The Acipenser naccarii or Adriatic sturgeon is an almost extinct species which Riofrío has recovered in captivity. The caviar of this 250 million years old living fossil is extracted after 18 years and is full of flavour and colour.

The Adriatic sturgeon inhabits the rivers of southern Europe and Spain and it has been endangered because over-fishing.

Today, thanks to intensive research and cooperation between scientists and universities, Riofrío has managed to have the world's largest population of this native sturgeon to produce the precious caviar without damaging wild populations.

The colour of this caviar is usually pearl grey, but may occur with different reflections. The freshness of the caviar presents an intense flavour and nuances which are not masked by the effect of time, salt or preservative.

Riofrío has readjusted the original Russian Mallosol process, which consists in adding very little salt, approximately 3 to 4 percent. The flavour is rich in nuances, silky and soft, serious and elegant on the palate with a marine breeze scent. The long lasting aftertaste reveals a sweet hint that invites you to continue tasting it.

The canning method is a process of manipulation, by which it is possible to preserve the caviar in the best possible condition for a long period of time.

Riofrío manufactures the only certified organic caviar in the world. Produced without added preservatives, this caviar keeps intact all the delicate nuances of flavour. This is the real caviar eaten by the Czars.

In addition to its superb caviar, Riofrío produces ready to eat sturgeon. Because of its very nature and the natural farming system, its meat is particularly heart-healthy, having a high percentage of polyunsaturated fatty acids, known as omega 3 and 6.

The purity, richness and quality of the waters of Riofrío, the climate of the area, the natural food, the treatment of the animals, its proprietary system and a very particular way of breeding, allows to this gem to grow in similar conditions to the wild, constituting the base which has led to a process of ecological farming.

The result is a European ecological certification, controlled by official bodies and agencies of sustainable development, giving to Riofrío’s products high purity and security to ensure the greatest pleasure for its customers.

The founding of the Piscifactoría de Sierra Nevada (PSN) in 1956 began with a traditional aquaculture production in Navarra, Spain.

In 1963 another establishment was born in Riofrío, Andalusia.

Thus, with over 50 years of experience in fish farming, and five facilities, including two of the largest sturgeon facilities in Europe, Piscifactoría de Sierra Nevada is now one of the largest sturgeon aquaculture farms in the world, the most important of Acipenser naccarii, and the only certified organic for caviar and sturgeon.
